The Jedi academy starship seems to have been oddly ignored by later works - you'd think it'd be an obvious setting for Old Republic-era Jedi adventures...
Theory: The Jedi didn’t have a permanent base of operations until very recently. Originally, the Jedi council was based on ships like the Chu'unthor. After its loss, they established temporary outposts on whatever world was the easiest for all members to travel to. It was only a few decades before the Clone Wars when the Republic senate organised the construction of a Jedi temple on Coruscant, and encouraged Jedi masters to live there permanently – at the Republic’s expense, in gratitude for the various services the Jedi order had provided over the centuries.
Among the supporters of the Jedi moving to Coruscant was the then-senator for Naboo, who spoke out many times that it was a galactic embarrassment that so many Jedi masters lived alone on often inhospitable planets, when the Republic could easily afford to house them in the capital. Unfortunately, nobody at the time considered that his proposal would also have the side effect of collecting most of the galaxy’s most powerful Jedi into a single rather indefensible location...
